Why not use a normal ABC extinguisher on a fryer fire?
Powder can knock the flames down, but it does not cool the oil much, so the oil can catch fire again. The wet chemical in a K type unit is meant for this kind of fire.
Should I throw water on burning oil?
No. Water sinks under the hot oil, turns to steam and throws burning oil out of the pan. Switch off the gas if it is safe to do so and use a K type extinguisher.
